I have yet to make this but I can not wait until I do. The sound delicious. When I make them I will be sure to take pictures and post them for you all to see.
Oreo Muffins
1 3/4 Cups Flour
1/4 Cup Sugar
1 tbsp Baking Powder
1/2 tsp salt
1/3 Cup Cold Margarine or Butter
1 Egg
16 Oreo Cookies, coarsely chopped
Preheat oven to 400 degrees F. Mix flour, sugar baking powder and salt in a bowl. Cut in margarine (or butter) until mixture resembles coarse crumbs.
Beat egg and mil with wire whisk until well blended. Add to flour mixture; stir just until moistened. Gently stir in chopped cookies. Spoon evenly into 12 greased or paper-lined medium muffin cups.
Bake 15 to 20 minutes or until toothpick inserted in center comes out clean.

August 29, 2005 at 8:00 pmWe don’t have a proper oven up here, but when I get down to NJ I think I’ll make these oreo muffins. I love baking in the fall/winter…it’s so, homey/cozy…for lack of a better word! Baking in the summer is just….blech…..
