I Love Snow Days

Today I made spinach dip. I got the recipe from my Stepmom because hers is the best I have ever tasted. It was simple enough (16 ounces of sour cream, chopped fresh spinach and a packet of Knorr’s vegetable mix) and turned out super yummy. It’s funny that I love fresh spinach (prefer it over lettuce on my salads) yet I cannot stand cooked spinach. Just the thought of it makes my stomach turn. Raven is the same way with carrots. She loves fresh carrots but absolutely hates cooked carrots and will not eat them.

Five days ago, I started my third attempt at the 365 Days Project. So far, I have kept it up but it has only been five days so I am not going to pat myself on the back just yet.

For the first time since I can ever remember, the county we are in actually canceled school for tomorrow at 5pm! Usually our county has a stick up their butt and would rather the kids go to school even if it means putting the children’s safety on the line. Moreover, when they do cancel it, it is always at the last minute such as 5:45am. I love snow days!

Besides baking, working and dwindling down my Netflix watch instant queue I have been trying to stay warm. It has been extremely cold and I do not do well in the cold. I have been covering up with my electric blanket and drinking loads of hot chocolate and coffee.

My weight lose is also at a standstill. Ugh. I have creeped back up to 166 pounds, which is completely unacceptable on my 5 foot 3 inch height. I think within the next few weeks I am going to pick up a Kinex and a few games (including Dance Central) and hope that helps me loose the weight. Even with my calorie intake being around 1100 to 1200 daily (with me doing 30 minutes of exercise), I still cannot seem to budge my weight any lower right now. How fitting is that, that I complain about not losing weight yet I post a picture of cupcakes. Meh.

    It’s funny. I have never had a snow day. In my entire life. Hmph. Oh well, the weather is kind of being crazy all over North America this week! And it doesn’t look like it’s going to let up any time soon. Just keep at your weight loss. Plateaus to suck, but you will get past it! Just don’t give up 😀

    I love baking, especially when it’s cold. In fact, that’s about the only time I’ll bake, and considering it’s hot 10 months out of the 12 out here when it does happen I’m ecstatic. I rarely eat baked sweets year round, but it’s a nice treat to have.

    I completely agree with you on the coffee area. I have more than I should, but it’s damn good stuff.

    A few friends of mine use the Kinect and the Wii to exercise, mainly because it doesn’t FEEL like you’re working up a sweat. It’s great! I think it’s a good motivation because it’s fun, but not something to seriously lose weight on if you have a certain goal in mind. Even if it makes people sweat they tend to stay the same rate throughout the entire gameplay, and varying speed is needed to cut fat. I’ve used the HIIT method in the past (around the same weight/height as you) and it’s worked wonders for me. It kicks your ass but it’s only 15-20 minutes and has the same effects of running for an hour.

    Spinach dip sounds yummy! I LOVE cooked spinach as well though, it’s actually my favorite green vegetable. Not so healthy, but I also love spinach pizza.

    My little sister had a snow day last week or this week, I can’t even remember now, but the school closed and her school is a lot like Raven’s they will wait until early in the morning to close rather than go ahead and close at night. You know, jobs are the same way when it comes to snow and the roads being bad. I remember last year it snowed pretty bad here and my job would get mad when you’d call in due to the snow, they even sent some people out to pick people up in order to make sure they were at work. I live too far out in the country though so I didn’t go, but it’s ridiculous how they really aren’t worried about the safety of each person rather than school being in session and/or workers going to work.

    Those cupcakes look delicious! Also, I just recently bought The Biggest Loser for the Wii and started it for the first time yesterday and it was a great workout.

    Mmm the Spinach dip sounds amazing! Your cupcakes look soo good too. I have been craving sweets so bad. I picked up a pre made peanut butter cookies package with 12 cookies. I plan to eat two and give the rest away. Or I will spray them with bug spray so I don’t go back and eat them!
