No Bake Energy Balls Recipe

An awesome friend of mine made these and let me try them. And after tasting them, I knew I had to have the recipe. After I quick trip to the store, I got all the ingredients that I didn’t have on hand (flaxseed meal, shredded coconut and chocolate chips) and got to making these tasty little morsels.

Now, they are called energy balls (or bites) but I’m not sure how much energy they actually give you. But they are delicious and contain flax seed, which provides many benefits, including a good source for dietary fiber, omega-3 and vitamin B1.

No Bake Energy Balls

Ingredients:

  • 2/3 cup sweetened shredded coconut
  • 1/2 cup peanut butter, creamy
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 1/2 cup ground golden flaxseed meal
  • 6 tablespoons chocolate chips (milk chocolate, semi-sweet, dark, butterscotch, whatever type you like)

Directions:

Step 1: Toast the shredded coconut. Set the toasted coconut to the side to cool.Energy Balls

Step 2: In a mixing bowl, combine the peanut butter, honey and vanilla extract.

Step 3: Add the old-fashioned oats, golden flaxseed meal and chocolate chips. Stir all the ingredients together until thoroughly combined and evenly coated.

Step 4: Place the mixing bowl in the fridge or freezer and let chill until the mixture is set.

Step 5: Remove the mixing bowl from the fridge or freezer. Shape the mixture into 1-inch balls.

Step 6: Store uneaten energy balls in an airtight container in the fridge.

    Oooo these look delicious. I don’t know what the difference between golden flax and normal flax, but other than that I think I have all the ingredients in my house!

    These do look delicious! I don’t think I have any of these ingredients either. Bother. I may have to try these sometime.
